We have been teasing you for a long time, but now we are finally ready to officially introduce our latest project, “SIMPEL Coffee”.
After 6 months of research, tasting coffee, and testing, we installed a working roastery underneath the bakery, and are now capable of producing delicious specialty coffee. Alex Labial came to the bakery from the academic world after his passion for coffee beckoned him to leap into the world of specialty coffee full-time. With his scientific approach and methodology, every cup of coffee is crafted with precision and care, resulting in flavourful coffee that will tingle your senses.

Washed Catuai and Caturra beans from the Tarrazú region of Costa Rica deliver a delicate and flavorful cup. Enjoy vibrant notes of mandarins and tangerines, balanced by caramel sweetness and subtle hints of vanilla and marzipan. This light-roasted coffee is perfect for both filter and espresso brewing, offering a rich and aromatic experience.

Brewing Recommendations
Filter
- Dose: 16 g coffee to 250 g water (98°C).
- Bloom: 45 g water for 1 minute.
- Grind Size: ~600 µm.
- Brew Time: 2:50 - 3:10 minutes.
Espresso
- Dose In: 18.5 g (use VST filter basket for consistency).
- Dose Out: 45 g.
- Grind Size: ~320 µm.
- Brew Time: ~28 seconds.
Freshness and Shipping
To ensure peak freshness, our coffee is roasted every Tuesday and shipped the following Wednesday. By roasting in small batches, we reduce waste and ensure you receive freshly roasted beans delivered straight to your door.
